Ingredients

12 dried apricots   (108g)
Sunflower, flax or pumpkin seeds  (10g)
Low fat cream cheese  (150g)
1 tsp honey  (8g)
Flaked almonds, toasted  (10g)

Method

  1. Place the apricots in a small pan, cover with hot water, then simmer over a low heat for about 20 minutes until the apricots have softened and the water has reduced to a syrup.
  2. While the apricots are cooking, grind the seeds using a pestle and mortar or a small blender.
  3. Once the apricots have finished cooking, allow them cool for a bit before blending them and their syrup into a thick purŽe.
  4. In a medium-sized bowl combine the cream cheese, honey and apricot purŽe, stirring until smooth.
  5. Spoon the cream cheese and apricot mixture into two glasses, sprinkle with ground seeds and toasted almonds, and serve.
