Baked Banana with Coconut

Bananas are high in vitamin B6, which converts food into energy. They're also high in the electrolyte potassium, making them a perfect snack after or during exercise.

Ingredients

2 large bananas, sliced or cut in half lengthways   (240g)
Desiccated coconut  (25g)
2 tsp honey  (16g)

Method

  1. Pre-heat the oven to 200°C.
  2. Place the banana on a small baking tray lined with foil. Sprinkle with the coconut and drizzle the honey evenly over the bananas then gather up the corners of the foil to create a little banana parcel.
  3. Place the parcel in the oven, bake for approximately 10 minutes then serve.
