Berries, Crème Fraiche and Hazelnuts

This fruit-based dessert is a rich source of vitamin E, which acts as an antioxidant and is needed for healthy skin and a strong heart and immune system.

Ingredients

50g blanched hazelnuts, crushed
3 drops vanilla extract
160g frozen berries, defrosted
50g low fat crème fraiche

Method

  1. Warm a small frying pan over medium heat. Add the hazelnuts and toast for a few minutes, stirring occasionally, until they start to colour. (Do not leave the pan unattended, as the hazelnuts will easily burn.) Leave to cool before crushing.
  2. In a small bowl, add the vanilla extract to the crème fraîche and combine.
  3. Place the fruit into two bowls and top with a spoonful of crème fraiche.
  4. Sprinkle with crushed nuts and serve.
