Bircher Muesli with Apple and Berries

Make this muesli the night before you want to eat it.You could replace some of the oats in this cereal with barley,spelt, quinoa and buckwheat. With calcium-rich yoghurt and fruits, this makes a nutrient laden start to the day.

Ingredients

1/2 medium apple, grated   (60g)
Rolled oats  (100g)
120ml cloudy apple juice
3 heaped tbsp low fat plain natural yoghurt  (120g)
Pinch of ground cinnamon
Frozen berries, defrosted  (40g)

Method

  1. Combine the apple with the oats in a bowl.
  2. Add apple juice, yoghurt and cinnamon to the bowl and mix until all the oats are covered.
  3. Cover the bowl and place in the fridge overnight.
  4. Stir and serve with berries
  5. Note: this keeps for 2 days in the fridge.
