Bircher Muesli with Banana and Berries

Bircher muesli is a deliciously fruity way to serve oats. You can get away with leaving it in the fridge for up to two days so it's great for those morning when you're in a hurry.

Ingredients

1/2 medium apple, grated   (60g)
rolled oats  (95g)
cloudy apple juice
2 tsp lime juice
3 tbsp low-fat plain natural yoghurt  (120g)
1 large banana  (120g)
frozen berries, defrosted  (40g)
2 tsp pumpkin seeds  (10g)

Method

  1. Combine the grated apple with the oats in a medium-sized bowl.
  2. Add apple juice and the lime juice. Then add the yoghurt to the bowl and mix until all the oats are covered.
  3. Cover the bowl and place in the fridge overnight.
  4. Stir and add more yoghurt if too thick. Serve with banana, berries and seeds.
