Edamame Dip with Carrot Sticks

Edamame beans are also known as soya beans and are a good source of protein, which makes this dip a good post-training snack for after the gym.

Ingredients

Frozen soya beans   (150g)
2 tbsp low fat plain natural yoghurt  (80g)
1 small avocado  (100g)
1/2 small red chilli  (5g)
1 tbsp lime juice
Fresh coriander  (10g)
Pinch of salt
2 large carrots  (240g)

Method

  1. Put the edamame beans into boiling water for 1 minute, drain and refresh by running under cold water tap for 30 seconds until cooled.
  2. Add all of the ingredients into a food processer and blitz to a coarse texture. You may need to loosen with a little water.
  3. Serve with carrot batons.
