Feta Cheese, Cucumber and Tomatoes with Pitta

Ingredients

1/4 large cucumber, washed and chopped   (100g)
2 medium tomatoes, chopped  (170g)
1 tsp lemon juice
1 tsp olive oil
Fresh flat leaf parsley, chopped  (5g)
Pinch of salt
Pinch of ground black pepper
1 small wholemeal pitta  (60g)
Vegetarian feta cheese (60g)

Method

  1. Put all the ingredients, except the feta cheese, in a medium-sized bowl and combine well.
  2. Toast the pitta bread.
  3. Divide the mixture between two bowls, top with crumbled feta cheese and serve with the pitta bread.
