Fruit Salad with Toasted Seeds and Chopped Nuts

Nuts and seeds are good sources of iron, a nutrient that is more readily absorbed by the body when combined with foods that are high in vitamin C, like oranges.

Ingredients

2 tbsp pumpkin seeds or sunflower seeds   (30g)
Mixed nuts, such as hazelnuts, Brazil nuts or almonds, crushed  (50g)
Fresh or canned fruit in juice such as oranges, apples, pear or berries, drained and chopped  (300g)
Pinch of ground cinnamon

Method

  1. Toast the seeds and nuts in a small dry pan over a low heat until they are lightly browned. Transfer to a small plate and leave to cool.
  2. Divide the chopped fruit into two bowls and sprinkle with toasted seeds and nuts.
  3. Add a pinch of cinnamon and serve.
