Gnocchi with Spinach, Red Pepper and Tomato Sauce

Gnocchi is made from potato and makes a great alternative to pasta. This dish provides a rich source of B vitamins that are required by the body to convert food into energy.

Ingredients

1 tbsp olive oil (15ml)
1 small onion, finely diced  (75g)
1 clove garlic, crushed  (6g)
1 large red pepper, de-seeded and diced  (180g)
1 x 227g can chopped tomatoes  (227g)
Pinch of salt
1 bag spinach, washed  (200g)
Store-bought gnocchi  (400g)

Method

  1. Heat the oil in a large frying pan, then add the onion, garlic and pepper and cook gently for 5 minutes.
  2. Add the tomatoes and salt then simmer for 10-15 minutes, stirring occasionally, until the sauce has thickened. Stir through the spinach, allowing it to wilt.
  3. Meanwhile, boil the gnocchi according to packet instructions.
  4. Drain the gnocchi then add it to the pan with the sauce, stirring until the gnocchi is coated in sauce.
  5. Divide into two bowls and serve.
