Ingredients

Cucumber, seeds removed and chopped into small chunks   (100g)
2 medium tomatoes, chopped  (170g)
Spinach, sliced  (50g)
1 small red onion, sliced  (75g)
Fresh flat leaf parsley, finely chopped  (10g)
1 medium avocado, halved, stoned and cut into cubes  (150g)
6 black olives, pitted and halved  (30g)
1 tbsp lemon juice
Pinch of salt
Pinch of ground black pepper
Vegetarian feta cheese (120g)

Method

  1. Place all the vegetables in a large bowl and combine with the lemon juice and olive oil.
  2. Season the salad with salt and pepper then divide the salad between two bowls and sprinkle each with feta cheese.
