Ingredients

1 small avocado, peeled and de-stoned   (100g)
1 small yellow pepper, finely diced  (90g)
1 small onion, finely diced  (75g)
flat leaf parsley, finely chopped  (5g)
1 tbsp lemon juice
Pinch of salt
1 tbsp pumpkin seeds  (15g)
2 oatcakes  (20g)

Method

  1. Place the avocado flesh into a medium-sized mixing bowl then roughly mash with the back of a fork.
  2. Add the pepper, onion and parsley, then squeeze over the juice from the lemon. Season with a pinch of salt.
  3. Spoon the avocado mixture on to two side plates and scatter the pumpkin seeds on top.
