Mushrooms on Rye Toast

Opting for a wholegrain variety of bread such as rye means increasing your intake of dietary fibre, which has been shown to help maintain good heart health.

1 tbsp olive oil (15ml)
Mushrooms, sliced (250g)
1 clove garlic, finely chopped  (6g)
Fresh parsley, finely chopped (10g)
Pinch of salt
Pinch of ground black pepper
4 medium slices rye bread (160g)
4 level tsp low fat spread (20g)

Method

  1. Heat the oil in a large non-stick frying pan and add the mushrooms. SautŽ over a medium heat for 2 minutes then add the garlic and cook for a further 5 minutes until the mushrooms are tender.
  2. Turn off the heat and stir through the parsley then season. Set the pan aside to keep the mushrooms warm.
  3. Toast the bread, add the spread and top with the mushrooms.
