Porridge with Yoghurt and Blueberries

Porridge make a versatile breakfast option as you can top it with any number of nutritious ingredients. Oats also contain beta glucan which has been shown to help reduce cholesterol.

Ingredients

Porridge oats   (100g)
Semi-skimmed milk (500ml)
2 tbsp low-fat Greek yoghurt  (90g)
Fresh or frozen blueberries  (180g)

Method

  1. Put the porridge oats into a thick based, preferably non-stick pan and add the milk.
  2. Cook over a low heat stirring until the mixture has thickened and continue cooking slowly for about 5 minutes. It will be quite thick but add a little more milk if it is really stodgy.
  3. Stir in the yoghurt, top with blueberries and serve.
