Raw Cacao and Banana Mousse

This dairy-free and sugar-free pudding is delicious and very nutrient-rich providing more than a third of your daily intake of magnesium, iron and vitamin B6.

Ingredients

2 medium very ripe bananas, peeled   (200g)
1 medium very ripe avocado, halved, stoned and flesh scooped out  (100g)
1 tsp cashew nut butter  (16g)
3-4 tbsp raw cacao powder or cocoa powder  (45g)
Pinch of salt
1 tbsp extra virgin coconut oil
Fresh or frozen raspberries  (80g)

Method

  1. Place all of the ingredients into a food processor and blend until completely smooth. You can also use a medium-sized bowl and stick blender. Once blended leave in the fridge for 20 minutes.
  2. In a small bowl, lightly crush half the raspberries and mix with the other half.
  3. Serve the chocolate mousse with the raspberry crush.
