Soya Beans with Lime and Chilli

Ingredients

Frozen soya beans   (120g)
1 tbsp pumpkin seeds  (15g)
2 sticks celery, finely sliced  (60g)
1 large spring onion finely sliced  (10g)
1/2 small red chilli finely chopped  (5g)
Coriander, finely chopped  (10g)
2 tsp reduced sodium soy sauce
1 tsp sesame oil
2 tsp lime juice

Method

  1. Place the soya beans beans in a colander and run under cold water for a few minutes to defrost.
  2. Set a small frying pan over a medium heat and toast the seeds for 2 minutes. Do not leave the pan as the seeds quickly burn.
  3. Place the beans in a medium-sized mixing bowl and add the celery, spring onion, chilli, coriander, soy sauce, sesame oil and lime juice then combine well. Serve.
