Tomato Bruschetta with Rocket and Butterbean Salad

Ingredients

3 medium tomatoes, diced   (255g)
1/2 small red onion, finely diced  (75g)
1 clove garlic, finely diced  (6g)
Fresh basil leaves, torn  (5g)
Pinch of salt
Pinch of ground black pepper
1 x 210g can butter beans  (125g)
Fresh flat leaf parsley, chopped  (10g)
1 small yellow pepper, finely diced  (90g)
Rocket  (100g)
1 tbsp lemon juice
1 tbsp olive oil
4 medium slices ciabatta  (160g)

Method

  1. Preheat the grill to a medium heat.
  2. In a medium-sized bowl, combine the tomatoes, onion, garlic, basil and season with salt and pepper. Set aside.
  3. In another medium-sized bowl, add the butter beans, parsley, yellow pepper, rocket, lemon juice and 1 tsp of olive oil. Season.
  4. Grill or toast the bread slices until golden brown, about 2 to 4 minutes per side. Once toasted, brush each slice with the remaining olive oil.
  5. Spoon the mixture on top of the bread slices and serve the bruschetta with the butter bean salad.
