Warm Citrus Fruits with Toasted Coconut

Ingredients

2 large grapefruit   (850g)
2 medium orange  (320g)
1 tbsp brown sugar  (15g)
1 tbsp unsalted butter  (15g)
Dessicated coconut  (30g)
Low fat Greek yoghurt  (150g)

Method

  1. Preheat the grill to a high setting.
  2. Remove the rind from the citrus fruits and slice each one into rings of about 10mm.
  3. Place the rings in a shallow baking dish, trying not to overlap them.
  4. Sprinkle the sugar over the fruit and dot with butter.
  5. Grill the fruit until it turns golden, then sprinkle with coconut and grill again until the coconut is toasted.
  6. Serve with yoghurt.
