Wholemeal Spaghetti with Cherry Tomatoes

This simple recipe uses few ingredients and produces a delicious light meal option. Olive oil is praised for its many health benefits that include promoting good heart health.

Ingredients

wholewheat spaghetti  (150g)
2 tbsp olive oil (30ml)
1 small red onion, finely diced  (75g)
3 cloves garlic, finely minced  (18g)
16 cherry tomatoes, cut in half  (250g)
1/2 medium lemon, zested  (1.5g)
Pinch of salt
Pinch of ground black pepper
fresh parsley or coriander, finely chopped  (5g)

Method

  1. Place spaghetti in large pan of boiling water and cook for 10-12 minutes, or according to packet instructions, until tender.
  2. While the spaghetti is cooking, heat the oil in a deep-sided frying pan over a medium heat.
  3. Add the onion and garlic, cooking for three minutes until softened.
  4. Add the tomatoes and lemon zest, then season with salt and pepper.
  5. Cook for about five minutes or until the tomatoes become really soft and the oil has begun to take on an orange colour. Once cooked, remove from heat.
  6. When the pasta has finished cooking, drain it and add to the tomatoes, along with the chopped herbs.
  7. Stir to combine, divide onto two plates and serve.
