Yoghurt, Apricots and Hazelnuts with Fruit Coulis

Ingredients

Frozen raspberries  (100g)
1 tsp lime juice (5ml)
Low fat Greek yoghurt  (400g)
9 dried apricots, sliced  (80g)
Blanched hazelnuts, crushed  (30g)
2 tsp honey  (16g)

Method

  1. Place the frozen raspberries in a blender with the lime juice and blend until smooth.
  2. Divide the coulis between two small bowls and top with the yoghurt.
  3. Sprinkle the apricots and hazelnuts on top of the yoghurt. Drizzle with honey before serving.
